SQUASH FRITTERS
- Mashed summer squash, 2 cups.
- Butter, 1 heaping tablespoonful.
- Sugar, 1 tablespoonful.
- Salt, ½ teaspoonful.
- Rich milk, ½ cup.
- Flour, 1 cup.
- Eggs, 2.
Mix thoroughly the squash, butter, milk, flour, sugar, salt, and beaten yolks. Then fold in the stiffly-beaten whites. Brown on a griddle.
