Veal Loaf
- 5 lbs. minced veal
- 10 eggs
- 11⁄4 cups melted butter
- 5 cups soft breadcrumbs
- 3⁄4 teaspoon pepper
- 21⁄2 tablespoons salt
- 5⁄8 cup chopped parsley
- 5⁄8 cup chopped onion
- 1⁄4 lb. fat salt pork
- 21⁄2 teaspoons ground sage
Cook it as directed on [page 117].
Serves forty or fifty persons.
