Boil sugar and coffee until the syrup spins a long thread. Cool. Add vanilla and fold in whipped cream. Freeze.

4 egg yolks
½ cup grated pineapple
½ cup orange juice and pulp
1 tsp. extract
½ cup water
2½ cups cream
¼ cup lemon juice
