Tongue Sausage

Use exactly the same meats and follow the same method for boiling as for blood sausage, only add to 100 lbs. of meat, 10 pickled hog tongues, cooked and cut into long strips, distribute them equally in the mixture, when filling same into beef bungs. Fill the casings only three-quarters full, and see that there is no air in it, as casings will burst easily, if not pierced from time to time with a fine fork.
