Each tablet contains a considerable proportion of real Turtle, and makes a large cup of nourishing food.

Directions for Turtle Soup.—The preparation requires to be soaked in cold water for three days (changing the water daily), when it extends to three or four times its present bulk or weight—becoming exactly similar to the Calipash and Calipee obtained from the fish after being killed. It is then to be cut into pieces of about an inch square, added to a suitable stock, and cooked until quite tender. One pound weight of Dried Turtle is sufficient for three quarts of soup. A glass of dry sherry added to each quart of soup will be found an improvement. Lemon juice and cayenne to taste.
