A few tablespoonfuls of sherry will improve this soup for many tastes. It should be added just before the soup is poured into the tureen.

Veal Broth.

2 pounds of the poorer parts of veal.

2 quarts of water.

3 tablespoonfuls of minced onion.

1 tablespoonful of minced carrot.

1 whole clove.

1 inch piece of cinnamon.

1 level tablespoonful of salt.

1/4 teaspoonful of pepper.
