When done, dish on a folded napkin, and put a little jam on each.
Ellen's Pudding.
- Ingredients—A little pastry.
- 1 oz. of butter.
- 2 oz. of sugar.
- ½ pint of milk.
- The grated rind of a lemon.
- 1 egg well beaten.
- 2 oz. of cake-crumbs.
Method.—Beat the butter to a cream in a basin.
Mix in the sugar thoroughly.
Add the milk gradually.
Then add the egg and cake-crumbs, and pour the mixture into a pie-dish lined with a little pastry.
It is an improvement to put some jam at the bottom of the dish.
Bake for about half an hour.
