163. WHITE CURRANT WINE.

Take of cold soft water, 9 gallons,
white currants, 9 gallons,
white gooseberries, 1 do.

Ferment.

Mix, refined sugar, 25 lbs.
white tartar, in powder, 1 oz.
clary seed, bruised, 2 oz. or
clary flowers, or sorrel flowers, 4 handsful;
then add, white brandy, 1 gallon.

This will make 18 gallons.

164. Another.

Take of cold soft water, 10 gallons,
white currants, 10 do.

Ferment.
