BEEF SOUP, THIN.
Wash and scrape well a shin of beef, put it down early in the morning in plenty of cold water, with a piece of veal, and a small piece of lean ham; let it boil slowly one hour, and skim it well; then add two carrots, washed, scraped, and cut fine, six potatoes, four onions, and one turnip; some horse-radish cut in small pieces; season with black and cayenne pepper, and salt to your taste: about half an hour before it is done, put in a bunch of sweet herbs, parsley, and a little celery cut in small pieces. You can either strain it or send it to table with the vegetables in it.
