15. Baked Smoked Haddock.

Get a good sized haddock, stuff it with the following mixture, and proceed as in above recipe.

Fish Stuffing.

One tea-cup of fine bread crumbs, two well boiled onions chopped and mashed to pulp, three ounces of butter, a small quantity of sage to taste chopped very fine, pepper and salt to taste. Mix all well together, and stuff the fish.
