Ox Tail Soup
- 6 ox tails
- 9 qts. [brown stock]
- 2 teaspoons salt
- 1⁄4 teaspoon cayenne
- 1⁄2 cup butter
- 11⁄2 cups Madeira wine
- 2 tablespoons Worcestershire sauce
- 2 tablespoons lemon juice
- Flour
