BANANA SHERBET.
3 quarts water,
6 pounds XXXX sugar,
About 15 very ripe bananas,
White of one egg.
Press them through a fine sieve into your sugar and water, then add 1 ounce of citric acid solution; strain all through a sieve into the freezer, and freeze.
