BLACKBERRY SHERBET.

3 quarts water,
6 pounds XXXX sugar,
1 ounce citric acid solution,
White of 1 egg,
3 quarts very ripe blackberries.

Press them through a fine sieve into your sugar and water, then strain all through a sieve, and freeze.
