Best Artificial Cider.
| Water25 | gallons. |
| Honey (or fine syrup)1 1/4 | gallons. |
| Catechu (pure)6 | drachms. |
| Alum1 1/4 | ounces. |
| Yeast 1/2 | pint. |
Ferment for fifteen days in a warm place, then add:
Bitter almonds2 | ounces. |
Cloves2 | ounces. |
Whisky6 | pints. |
| Burnt sugar, to color. |
If acid should be in excess add honey or sugar; if too sweet add cider vinegar to suit the taste.
