The accurate way to determine the strength of brine is by the use of a reliable Hydrometer, The “Heller” Hydrometer has certain features that makes it especially desirable for this purpose. It is extremely convenient to use, as it contains a special scale printed right alongside the degree scale, which shows the proper strength of brine for curing each kind, or piece, of meat.
