Nine eggs.
A teaspoonful of salt.
Beat the yolks thoroughly, stir in the flour, and add the milk slowly. Beat the whites of the eggs to a froth and add the last thing. Tie in a floured bag, and put it in boiling water, and boil two hours. Allow room to swell.
Mock Cream.
Beat three eggs well, and add three heaping teaspoonfuls of sifted flour. Stir it into a pint and a half of boiling milk, add a salt spoon of salt, and sugar to your taste. Flavor with rose water, or essence of lemon.
This can be used for cream cakes, or pastry.
Bread Pudding.
Three pints of boiled milk.
Eleven ounces of grated bread.
Half a pound of sugar.
