Rice Cake.
- Ingredients—8 oz. of ground rice.
- 6 oz. of castor sugar.
- 4 eggs.
- Grated rind of a lemon.
Method.—Beat the eggs well with a whisk.
Mix in gradually the castor sugar and rice, and add the lemon rind.
Bake in a well-greased baking-tin in a quick oven for about one hour.
