Welcome-Guest Pudding.
- Ingredients—¼ lb. of suet.
- ¼ lb. of sugar.
- ¼ lb. of cake-crumbs, or ratafias, rubbed through a sieve.
- ¼ lb. of bread-crumbs.
- The rind and juice of one lemon.
- 3 eggs, well beaten.
Method.—Put all the dry ingredients into a basin.
Add the lemon rind and juice, and mix with the eggs.
Put into a well-greased mould.
Cover with buttered paper, and steam for two hours.
