Butter or butter substitute1 c.
Lemon juice½ c.
Lemon rind, cut thin½ c.

Mix the sugar and cornstarch and add to the boiling water, stirring constantly. When the starch is clear, remove from the fire and add the fat, lemon juice and salt, and lemon rind.
