- ½ cup butter
1 cup seeded raisins
1 cup molasses
¾ cup milk
1 teaspoon salt
1 teaspoon soda
½ teaspoon cloves
½ teaspoon cinnamon
½ teaspoon mace
3-¾ cups flour
Cream butter; add remaining ingredients; pour into buttered mold; steam four hours. Serve with [Brandy Sauce] or [Foamy Sauce].
PUDDING SAUCES
Apricot Sauce
- ½ cup apricot jam, or
1 cup apricot juice
½ cup sugar
½ cup water
1 teaspoon cornstarch
1 tablespoon lemon juice
few grains salt
Boil all ingredients ten minutes.
Apple Sauce
- 1 cup chopped apple
1 tablespoon arrowroot
few grains salt
½ cup cold water
few grains cinnamon
1 tablespoon lemon juice
grated rind of ½ lemon
Cook all together ten minutes. Strain, add more lemon juice if needed.
