- 2 teaspoons arrowroot or cornstarch
2 cups water
1 cup sugar
grated rind and juice one lemon
1½ tablespoons butter
Mix arrowroot or cornstarch with sugar. Add boiling water and cook twenty minutes. Add flavoring and butter. Serve hot.
Maple Sauce
- 2 egg yolks
½ cup maple sirup
½ cup beaten cream
few grains salt
Beat yolks until thick; add maple sirup and cook until it thickens. Add beaten cream, salt. Chill and serve.
Maraschino Sauce
- 1 cup sugar
1 tablespoon arrowroot
2 cups boiling water
2 tablespoons maraschino
Mix sugar, arrowroot and boiling water; boil ten minutes. Add maraschino. Chill and serve.
Orange Sauce No. 1
- grated rind, juice and pulp of 3 oranges
⅓ cup powdered sugar
3 egg whites
1 tablespoon lemon juice
