This makes two good sized cakes, or four layers.

Date Cake

1 Cup Sugar
½ Cup Butter
2 Eggs
2 Cups Flour
1 heaping teaspoon baking powder
1/3 cup Milk
1 lb. stoned and chopped dates rolled on a portion of the flour

Cream the sugar and butter. Add the well beaten yolks; then the whites; then the flour well sifted with the baking powder. Beat until smooth; add milk, then dates. Beat thoroughly and bake three-quarters of an hour in a steady, but not too hot oven.

Pfeffernusse (Pepper Nuts)

1 cup Lard
1 cup Butter
2 cups Brown Sugar
3 Eggs
2 teaspoons Annise seed (ground)
2 oz. whole coriander seed
½ lb. Chopped Almonds
½ lb. Mixed Citron
6 cups Molasses
2 teaspoons Soda
1 Quart Flour
1 teaspoon Cream of Tartar

Cocoanut Cake

1 cup butter
1 cup sweet milk
1 teaspoon soda
1 grated cocoanut
3 cups sugar
4½ cups flour
2 teaspoons cream tartar
4 eggs (beaten separately)

In place of the soda and cream of tartar 3 teaspoons of baking powder can be used.
